I have heard of other people having issues with removing the dashboard but it's actually very simple .. if you remove all the right things first. You will need 10mm & 12mm sockets, a pair of pliers for removing clips and small & medium Phillips-head scrwedriver (a stubby one comes in handy too)
Steps involved :
Pics included for reference. Simply remove and connectors where necessary and label them once disconnected.
1 - Undo 2 screws at the top of instrument/gauge cluster surround and remove surround (including connector for electric mirrors)

2 - Remove 3 screws that mount the main gauge instrument/gauge cluster and pull out slightly. The speedo cable will prevent you from pulling it all the way out.

3 - Either undo speedo cable from the gearbox or loosen the cable from the bracket off the firewall in engine bay to give the cable some slack. Push the cable through firewall a little and get access to the rear of the instrument cluster.
4 - Pull RHS of instrument cluster outward. Reach behind cluster and unclip the speedo cable from LHS of back of the cluster (there is not much room for this). The speedo cable is held on by a plastic lever/clip - Pinch the clip about 2-3cm out from the back of the cluster and the cable will pull out easily. Have patience with this - the clip does twist a bit but it would be easy to break it. Pull the cluster further outward and remove all electrical connectors from the rear of the cluster. I have reconnected the cable in the pic below to show how it's connected.

5 - Remove panel under the steering column (a couple of screws either side of panel).
6 - Remove steering column surround (a couple of screws on top & bottom of surround)
7 - Remove the glovebox - Squeeze the sides of the glovebox in to drop the glovebox down and undo two screws to remove.
8 - Remove knobs from the air-con temperature levers and use a screwdriver (coevered by a rag) to pop out the centre controls. If you have a stereo, remove that as well.

9 - Remove the entire centre console surround (pull out by hand with a little force).

10 - Pop out the clock on the top of the dash with a small screwdriver
11 - (Optional) Remove the steering column (remove 4 nuts underneath the dash and one bolt holding the lower splined shaft to the CV joint)
12 - The main dash is held on by 9 bolts. The obvious locations are four on the left & right of the centre console and one next to either door. The three hidden ones are behind the glovebox (with a ground wire), behind the clock and behind the instrument cluster (with a ground wire). Once these are removed, there are 4 plastic clips that hold the top of the dash to just below the windscreen. Swiftly pull at the top of the dash out to pop these. The clips are a pink colour in the pic below.
13 - Remove screws from all plastic vent pieces (screwed into the back of the dash) to get access to wiring loom.

14- Start removing wiring loom, clips, screws from rear of dashboard. The dash can then be removed completely.
15 - The main tube/bar across the cabin will have also have to be removed to get access to wiring & connectors in the glovebox area. Remove 2 bolts into the left of the tube, 3 bolts on the right of the tube and couple in the middle.

The wiring loom that leads from the engine bay through the centre of the firewall leads directly to the fuse box on the left of the steering column (above the drivers left knee) . This part of the loom can be disconnected from the fuse box so the entire cabin-area loom can be removed in one piece. The pic below is this loom ... being investigated by Customs - our Beagle.
